Kasuri Dimba alu

 




Ingredients..... 

6 Boiled Eggs

1 Boiled potato into small cubes 

1 onion slices 

1 tomatoes chopped 

1 tsp of GG paste 

1 Cup tomato puree (HM)

Handful of karuri methi

1 tsp Red chilli powder 

½ tsp of Garam masala powder 

½ tsp of curry masala powder 

⅓ tsp of turmeric powder 

½ tsp fried fenugreek powder. (HM) 

½ tsp fried garlic powder HM) 


Preparation..... 

Heat a kadhai saute methi leaves for a while remove and crushed, divide into 2 parts and keep aside. 

Heat a tsp of oil, add the boiled eggs and a pinch of salt.Fry it for few minute the outer layer of egg is hard finally add a pinch of chilly powder and put off the flame toss well and remove in a plate keep aside. 


Heat same kadhai add some more oil and add onions let them cook and give nice brown. add GG paste, chopped tomato , Add the pureed tomatoes along with all above dry spices and salt . Mix well and let the mixture cook until the oil starts oozing out and is aromatic.


Add the cubed potatoes and eggs along with warm water to bring the curry to the the required consistency. 

Let it simmer for about 10 minutes.

Switch off the flame remove the lid sprinkle fried kasuri leaves and fried garlic powder all over the curry. Stir when you start to serve.  Serve as side dish.

  Ingredients.... 3 Plantains 1 cup Soya chunks 2 tbsp Besan 1 tsp GG paste 1 tsp Red chilli powder 1 tsp kashmiri chilli powder 1 tsp aam chur powder ¼ tsp Turmeric powder 1 tsp Garam masala powder Salt to taste Oil  Few wooden Skewers Preparation.... Grind till small granules without using water.  Wash plantains with skin trim the tip and  stem. Boil plantains with excess water and remove the skin, cut and grind into roughly  without water. Add both nuggets granules and plantain on mixing bowl add all above spices and mix make a nice thick dough.  Keep this in refrigerator for 10 minutes.  Soak the skewers before making seekh kebbabs.   This is my favorite form of chicken curry, not only because it tastes great but also because it requires very little work in the kitchen. Munika Saaga Kanji

Drumstick leaves Kanji1 "KANJI" the most famous and an authentic well-known odia cuisine. This recipe has been serving by Odia people since ages. Mostly villagers were store Pakhala (Fermented rice) for at least one week by exchanging it's water again and again to  preparing kanji, jaau, chala or drinking clear Torani with adding few green masalas. My grandma always used to cook kanji in earthen pot . It tastes like heavenly food. I truly enjoyed  to cook kanji for my family because we all love to eat twice a day.
