Rohu fish biryani



Ingredients:

Fish fry

1 Rohu fish
Curry Cut
Marinated with
½ tsp Termeric
1 tsp Curry masala powder
1 tsp Coriander powder
1 tsp Red chilly powder
1 tsp GG Pastes
And salt

Marinade and keep in refrigerator for 1 hour.  Remove and fry till crispy.


For Fish Curry....

1 onion Sliced
1 Tomato paste
1 tsp GG paste
1 tsp Curry powder
1 tsp Red chilly powder
½ tsp Termeric powder
1 tbsp chopped Mint
Fried Fish
1 Cup hot water
Salt
Oil

Heat kadhai along with oil add onions saute ,add tomato paste fry till half in quantity ,add GG paste, curry powder,red chilly powder, termeric powder fry till loosen the oil and leaves fragrance.
Add 1 Cup hot water bring to nice  boil,add fish cook for just few minutes.
Remove from flame sprinkle chopped Mint over it and cover the lid.

For Rice ......
Use your regular rice cooking pot
wash and soak with
4 Cup water
½ of lemon juice
2 Cup long grain basmati
2 Cardamom crushed
4 Seed of Black Cardamom
4 Cloves
1"Cinnamon into half
2 Star Anise
1 bay leaf into half
½ tsp Butter
1 tbsp Chopped Pudina

Soak for one hour after one hour cook rice on medium heat until half done
Remove the rice water on another vessel.
Keep the rice on refrigerator for 10 minutes.


Toppings

Hand full of Chopped Mint and Coriander leaves.
1 tbsp butter chilled butter cut into small  cubes.
1 pinch Saffron soaked in milk.

Biryani making...

* Collect all cooked and uncooked ingredients near to kitchen platform.
*Take biryani pot grease with 1 cube chilled butter.
*Spread half of the fish curry to all over the bottom of pot.
*Spread cooked rice along with its spices
*Sprinkle chopped coriander and mint leaves.
*Complete the layers till finish.
*On top sprinkle chopped Mint and coriander leaves ,saffron milk and butter.
*Seal with air tight lid or if not possible use chapati dough to lock the flavour.
* Place the pot on gas top cook on low flame for 30min.

Serve with your choice of raita .

Soya kebbab

  Ingredients.... 3 Plantains 1 cup Soya chunks 2 tbsp Besan 1 tsp GG paste 1 tsp Red chilli powder 1 tsp kashmiri chilli powder 1 tsp aam chur powder ¼ tsp Turmeric powder 1 tsp Garam masala powder Salt to taste Oil  Few wooden Skewers Preparation.... Wash and soak soya nuggets in warm water. When it double in size, Squeeze and gently press the soya chunks between your palm to drain the excess water from it. Do this process 2 to 3 times for removing impurities if any. Put them in the grinder jar,add half of the soya nuggets at a time. Grind till small granules without using water.  Wash plantains with skin trim the tip and  stem. Boil plantains with excess water and remove the skin, cut and grind into roughly  without water. Add both nuggets granules and plantain on mixing bowl add all above spices and mix make a nice thick dough.  Keep this in refrigerator for 10 minutes.  Soak the skewers before making seekh kebbabs. Munika Saaga Kanji

Drumstick leaves Kanji1 "KANJI" the most famous and an authentic well-known odia cuisine. This recipe has been serving by Odia people since ages. Mostly villagers were store Pakhala (Fermented rice) for at least one week by exchanging it's water again and again to  preparing kanji, jaau, chala or drinking clear Torani with adding few green masalas.
