BREAD 65 FRIED RICE
















Ingredients:

    Bread slice chopped in small peieces-1cup
    corn flour-2 tbsp
    Kashmiri red chilly powder- 1 tsp
    Ginger-garlic paste- ½ tbsp
    Salt- to taste
    Water- 3 to 4 tbsp
    Oil- enough for deep frying

Preparations 1:

Toast the bread slices in a toaster or in a  hot pan till it gets crispy and golden.
Using a sharp knife, cut the bread to small cubed pieces.
In a bowl, add the bread pieces along with all the above mentioned ingredients except oil.
Add only very little water to bind the bread and corn flour, don’t make it watery.
   
Make small balls out of the bread-flour mixture,keep aside.
Place a frying pan over medium heat, add enough oil for deep frying.
Drop the bread mix balls into the hot oil, fry till it turns little brown.
    
Transfer to a kitchen paper towel.

Ingredients 2:

rice-1 cup
mix vegies-1/2 cup small chopped
soy sauce-1 teaspoon
pepper-1 teaspoon
oil
salt    
    

Preparations 2:   

soak rice in water for 30 mins.
drain and cook the rice in 4 to 5 cups water, till the grains are all dents or just cooked.
strain in a colander and let the rice cool completely. cover and keep the rice in refrigerator.
when the rice is cooling, chop the veggies and keep aside.
heat oil in a pan. first add the star anise and fry for half a minute or till the oil becomes fragrant.

add all the veggies and stir fry on a high flame.
do not burn the veggies.stir continuously to avoid the burning.
through this  the veggies are uniformly cooked and do not get burnt.
the veggies have to be cooked till they are almost cooked and yet retain their crunchiness and crispiness.
add the soy sauce, salt and pepper. stir quickly and add the rice. 
stir fry for a few minutes till the sauce has coated the fried rice well.
now add all the bread 65 pieces and toss well.
serve hot  bread 65 fried rice with your choice of sauce or curry.

  This is my favorite form of chicken curry, not only because it tastes great but also because it requires very little work in the kitchen. Munika Saaga Kanji

Drumstick leaves Kanji1 "KANJI" the most famous and an authentic well-known odia cuisine. This recipe has been serving by Odia people since ages. Mostly villagers were store Pakhala (Fermented rice) for at least one week by exchanging it's water again and again to  preparing kanji, jaau, chala or drinking clear Torani with adding few green masalas. My grandma always used to cook kanji in earthen pot . It tastes like heavenly food. I truly enjoyed  to cook kanji for my family because we all love to eat twice a day.
